We were lucky to catch up with Adam Bresina recently and have shared our conversation below.
Adam , so good to have you with us today. We’ve always been impressed with folks who have a very clear sense of purpose and so maybe we can jump right in and talk about how you found your purpose?
Purpose comes from understanding what you want your life to look like; how you want to live your day to day. I found my purpose in hospitality at a young age. Something about the comradery, fast pace, and ever changing environment drew me in. From there it’s been a leveraging game, taking what I learned from the last restaurant and building upon it. I’ve been fortunate enough to work at a wide variety of establishments from fine dinning, to bar & grills. Each opened my eyes to new opportunities, until eventually the idea for Egg on a Roll was born. A new style of fast food that puts all of its focus on a singular, quality product. In this case, the humble egg sandwich. My purpose is to be a new style of hospitality where the employees feel a sense of ownership, our guests connect with us on more human basis, and our business partners get to share in the joys of an inclusive, innovative brand. Egg on a Roll was born from developing my own dream job that fit with my lifestyle. Taking inspiration from the gig economy, and giving it some more structure, we’ve been able to provide flexible work schedules, ample time off, and a great compensation package that allows us all to not only thrive in the work place, but also in our personal endeavors. I found my purpose by connecting with people through approachable, fun food.

As you know my name is Adam Bresina. I’m the founder of Egg on a Roll, and Chief Operating Officer for a innovative new group called Green Bear Hospitality. We look to develop our own style of hospitality based around creative new concepts that cut down on overall operating costs, and improve the lives of employees. Egg on a Roll has been steady growing since we opened in the North Loop of Minneapolis last June. All new branding, website, ordering process, and partnerships have launched Egg on a Roll to the next level. With our second location opening early fall near The University of Minnesota, we are jazzed to share this brand with the masses. For those reading in the Twin Cities Metro, we will have locations in Northeast Minneapolis, St. Paul, and Uptown/Lake of the Isles neighborhood before you know it. We believe Egg on a Roll fills a need in our communities for quick, healthy, and affordable sandwiches. Our team of egg slingers are always coming up with new specials. Stop by, ask them what’s good, and be ready to have the best egg sandwich of your life.
There is so much advice out there about all the different skills and qualities folks need to develop in order to succeed in today’s highly competitive environment and often it can feel overwhelming. So, if we had to break it down to just the three that matter most, which three skills or qualities would you focus on?
Zooming out and looking at what it took to launch Egg on a Roll, I believe resilience, connection, and out of the box thinking is what set us apart. When it comes to launching a new business, the best products are born from fulfilling a need. Personally, I needed a space to be creative and to have the autonomy to try things a different way. The community needed a quick, affordable food option. In steps Egg on a Roll.
The resilience it takes to risk everything on one idea is the first step. That same resilience will be tested time and time again as folks question, poke, and prod your idea. Standing firm in what you know, and remembering the age old saying; don’t take advice from someone who’s life you’d never want to live. Align with like individuals, and be resilient in the pursuit of your goals.
Make connections; real connections. Never underestimate the power of small talk; you never know who might be your biggest supporter down the road. Being skillful at making genuine connections with your community, guests, and employees only rises the tide for everyone.
Don’t take the path most traveled. If you want to stand out and be more than a sum of your parts, you need to think outside the box. Doing something completely differently than the competition is the best way to get a leg up in launching your idea. Egg on a Roll fulfills a very common need, in a very uncommon way. It’s out of the box thinking, and problem solving that lead us to where we are today.
We’ve all got limited resources, time, energy, focus etc – so if you had to choose between going all in on your strengths or working on areas where you aren’t as strong, what would you choose?
Go all in on your strengths. Understanding that we all have a bandwidth, and how we choose to invest that time and energy is completely up to us. I believe the best bang for your buck is when you nail down your skill set, and then collaborate with people that balance you out. Egg on a Roll is the culmination of an array of talented people. From engineers to graphic designers; we wouldn’t be here today without their talents. Competition drives individuals to feel like they need to know everything. Collaboration celebrates each individual’s unique skill set. In my experience the latter leads to better, more profitable results.
