Chef Jay, we’re so excited for our community to get to know you and learn from your journey and the wisdom you’ve acquired over time. Let’s kick things off with a discussion on self-confidence and self-esteem. How did you develop yours?

I developed my confidence by no longer allowing people to create my reality. I was always being put down for trying to start my business and urged to work a 9-5 for the rest of my life. When I had failures early on I never gave up I kept going as hard as it was. Being the only person that believes in you can be very discouraging but I knew my purpose was bigger than my me. I feel damn good about myself, even when I make a mistake. A lot of people wait for someone to make them feel important or to make them feel valued but I make myself feel that way.

Let’s take a small detour – maybe you can share a bit about yourself before we dive back into some of the other questions we had for you?

I created my own batter and seasonings! My customers whom I lovingly call Chickenheads have always raved about my chicken so I created my own batter. It’s launching this month and I’m super excited! It’s special because you can use it on anything. I have amazing packaging I designed myself and I even have a frozen cookie dough line coming out this month as well.

There is so much advice out there about all the different skills and qualities folks need to develop in order to succeed in today’s highly competitive environment and often it can feel overwhelming. So, if we had to break it down to just the three that matter most, which three skills or qualities would you focus on?

Looking back I’d say failing constantly and making major mistakes really built my character to withstand this business. Improving my cooking techniques, not procrastinating and working smarter not harder has truly helped as well. For anyone trying to forge their way in this realm I’d say make sure your presentation is on point. Whether it’s the way you look, how your food looks or product visuals; it all matters. People will constantly judge you for the smallest thing.

I’m always looking and open to collaborating with like minded chefs or creatives. As long as it makes sense on both ends I feel we are stronger together.
