Hi Cesar, thank you so much for agreeing to open up about a sensitive and personal topic like being fired or laid-off. Unfortunately, there has been a rise in layoffs recently and so your insight and experience with overcoming being let go is relevant to so many in the community.

I kept working on my own thing

Appreciate the insights and wisdom. Before we dig deeper and ask you about the skills that matter and more, maybe you can tell our readers about yourself?

My goal is to become the best baker I can be. I’m always looking for ways to improve the doughs for bread and pizza that I offer, I’m always trying new flours, flour blends and hydration to achieve the best loaf or pizza I can make.

If you had to pick three qualities that are most important to develop, which three would you say matter most?

The things that helped me was to keep at it, keep trying different formulas, flours, etc. until I had the desired result, make note of it and use that as a starting point to continue learning.
The one thing that it always overlooked in baking is time, time is an ingredient in baking.

Awesome, really appreciate you opening up with us today and before we close maybe you can share a book recommendation with us. Has there been a book that’s been impactful in your growth and development?

The book that I consider my source of knowledge is tartine bread, that’s where I got the foundation for all I do dough related.
