Hi Pasquale, so happy to have you on the platform and I think our readers are in for a treat because you’ve got such an interesting story and so much insight and wisdom. So, let’s start with a topic that is relevant to everyone, regardless of industry etc. What do you do for self-care and how has it impacted you?
I rely on the principles of the Mediterranean diet and the culinary traditions from my home region of Puglia, where I was born and raised. Food, and more importantly, the dinner table, have always been my greatest strengths. Everything changed and improved after I decided to take online courses a few years ago in nutrition science with Stanford University, Whole Food Plant-Based studies with the T. Colin Campbell Center for Nutrition Studies, and Nutrition and Metabolic Syndrome with Harvard University and eventually become an Integrative Nutrition Health Coach. Having foundational scientific knowledge about how food and the dinner table can impact overall well-being, while producing positive energy, has made all the difference. It allows me to effectively interact with the challenges of society. Today, I feel like a lion.

I am passionate about the Mediterranean diet and the culinary traditions of Puglia, which have been integral to my personal and professional journey. Growing up in Puglia, I was surrounded by rich flavors and a vibrant food culture, which instilled in me a deep appreciation for the role of food in well-being and community.

Professionally, I have expanded my understanding of nutrition by taking courses from esteemed institutions like Stanford University, the T. Colin Campbell Center for Nutrition Studies, and Harvard University. This education has empowered me to blend traditional practices with modern nutritional science, fostering a holistic approach to health and wellness.

What excites me most about my work is the opportunity to share this blend of tradition and science with others. Whether through cooking classes, nutritional coaching, or community workshops, I strive to inspire people to embrace healthier lifestyles that are both delicious and sustainable.

Currently, I am focusing on developing new programs that highlight the benefits of plant-based eating, rooted in the principles of the Mediterranean diet. I am also working on a series of events that bring people together around the dinner table to explore the connection between food, culture, and health.

In the future, I hope to expand my offerings to include a wider range of educational resources and culinary experiences, helping even more people discover the power and joy of nourishing food.
In 2018 I launched my Private Chef company based in New York City called Alloro New York Private Dining Alloro New York Private Dining is an exciting extension of my passion for Mediterranean cuisine and the culinary traditions of my upbringing in Puglia. At Alloro, we create bespoke dining experiences that celebrate the rich flavors and nourishing principles of the Mediterranean diet, blending traditional techniques with contemporary flair.

Drawing upon the scientific insights and culinary skills I gained through my studies at Stanford University, the T. Colin Campbell Center for Nutrition Studies, and Harvard University, Alloro offers menus that are not only delightful to the palate but also aligned with the latest in nutritional science. This ensures that our guests enjoy meals that are both delicious and nourishing, enhancing their overall well-being.

This passion has helped me create authentic and meaningful dining experiences that resonate with others. For those early in their journey, I recommend embracing what truly excites you. Authenticity and enthusiasm are contagious and can serve as strong foundations for building expertise and a unique career path. Commitment to Lifelong Learning: Investing in continuous education, such as the courses I pursued on nutrition science and related fields, has been vital. This commitment to learning has allowed me to merge traditional culinary practices with modern nutritional insights. I advise beginners to remain curious and proactive in seeking knowledge. Whether through formal education or self-directed learning, expanding your understanding of your field will empower you to innovate and adapt.
