Meet Remy Zurita

We were lucky to catch up with Remy Zurita recently and have shared our conversation below.

Remy, so excited to have you with us today. So much we can chat about, but one of the questions we are most interested in is how you have managed to keep your creativity alive.
Our creativity is always alive at Hopnonymousbrewing. Creativity is actually part of our DNA, we are a very small brewery production wise but we are embracing this as a Forte. Staying small allows us to having fun with new creations on a weekly bases. Every Friday we release a new beer which could be a brand new recipie or a beer that we know had great success in the past that we want to bring back to our community. Having consistently new beers on tap allows our team to keep having fun while we keep our customers’s curiosity going: an excellent way to keep everyone excited!

Let’s take a small detour – maybe you can share a bit about yourself before we dive back into some of the other questions we had for you?
Hopnonymous brewing is first and foremost a community oriented brewery & tasting room. We brew every week so that’s allows us to come up every Friday with at least 1 new release. For example this Friday we’re releasing a kettle sour, a hard seltzer and a New Zealand Pilsner.
Our goal is to have at least 1 beer that you will love. Each person coming in has to find at least 1 beer truly pleasing them. The goal is for every single of our guest to feel comfortable coming back with a family member, their best friend or people they care about.
Brewing consistently keep us all excited to talk together and discover new flavors.
Doggies and kids friendly. We have wooden games everywhere. Art exposed everywhere and have a great outdoor patio. We collaborate each day of the week with a different food vendor.
Hopnonymous brewing has been built to offer an extension of their house to every single of our customers, to create the perfect environment to meet great people and explore new flavors consistently.
Family owned and operated.

There is so much advice out there about all the different skills and qualities folks need to develop in order to succeed in today’s highly competitive environment and often it can feel overwhelming. So, if we had to break it down to just the three that matter most, which three skills or qualities would you focus on?
First of all Passion. The head brewer andI have been in the industry for the last 15+ years. The food and beverage business is extremely tough market. The amount of love and sweat put into the daily work is huge. I believe without passion is really hard to keep up.

Second is Knowledge: as I said above we have been in the industry for over a decade, each of us is our own specialties
The head brewer Hunter Mannix, San Diegan born & raised worked at ballast point, mikkeler and Coronado which are staples in the brewering industry.
I did most of my studies (master degree in hospitality management) and experience in France (luxury hospitality) and dedicated myself to guest services and concierge services.

Third is patience: opening a business in California is a long journey by itself. Ether be ready mentally and financially in order to be able to afford the waiting time until the green lights (permits) are given.

Who is your ideal client or what sort of characteristics would make someone an ideal client for you?
We are not looking for 1 type of customer, we actually are looking to bring in the same space people that were never suppose to be together. Our San diegan community is so diverse which makes is extra special. The goal for us is to have people seated next to each other to end up talking together and share good times. That at the end what makes the difference in between a brewery tasting room and a bar: a certain alchemy builds up while you are on site, people easily share their feedbacks to each other on the experience they are having. Probably brought by the magic of having a full operation from brewing manufacturing to tasting on the same site. Nothing is better than drinking a beer and being able to watch the brewers working and to smell all the ingredients of a beer being dealt with. Full cercle experience.
