Hi Kimberly, thank you so much for taking time out of your busy day to share your story, experiences and insights with our readers. Let’s jump right in with an interesting one: What makes you lose track of time—and find yourself again?
Lol! I would say getting caught up with scrolling or posting content to my social media. I am a one woman show, so I’m in charge of it all. It’s so easy to get distracted with ideas constantly flowing and feeling the need to share what I think is important. I had to schedule the times for posting, so it doesn’t distract me from baking. I literally have to tell myself to put the phone down, turn on music or a show and get started.
Can you briefly introduce yourself and share what makes you or your brand unique?
Absolutely! My name is Kimberly Fox Knight and I am the proud owner of Gimme Pound Cakes in Richmond Virginia. For the past 11 years, I have blessed RVA and the surrounding areas with a variety of delicious homemade pound cakes. What started out as a hobby and passion for baking, soon became a household name that many have shared in my area. Whether you stop by The Market at 25th, VCU Ram City Market or you see me around town at pop up events, Gimme Pound will always leave you reflecting on memories of when you had your very first pound cake.
“Tasting the memories with each bite”. I use this phrase because pound cake is a traditional staple in families in the South. Either your at church, family function, cookouts or a homegoing celebration a homemade pound cake will always be present.
A pound cake stands alone! It’s packed with tones of flavor that it really doesn’t need anything else to go with it to make it great. I love hearing stories about customers enjoying my cakes, memories of loved ones who once cooked pound cakes and even being compared to relatives that mastered what it should taste like. My company has grown over the years and I’m working towards expanding my customer base. We shall see what the future has in store for Gimme Pound.
Thanks for sharing that. Would love to go back in time and hear about how your past might have impacted who you are today. What did you believe about yourself as a child that you no longer believe?
I grew up singing with my two older sisters in church which carried over to grad school and then college. I graduated from Virginia Commonwealth University with a Bachelors in Music(Voice). Performing was my everything!! Myself and my sisters would sing and dance, recite movies and perform for family functions through my childhood. I didn’t see anything else for myself because performing was my focus. I had no idea that I was talented in until I went to a workshop at church. I was given a list of 30 different hobbies and I had to check off the hobbies that related to me. During that time, I had just graduated college and I was in between performing and working while paying off college loans. I was not in the best head space and I was questioning my current situation “Kimberly, what are you really doing?”
Going down the checklist, I identified the hobbies and traits that I had from past experiences and simple things that I just enjoyed being apart of. I soon realized that I was filling up the page. Out of 30, I had 24 spots checked off. Talk about having a light bulb moment! I was not expecting to have that many interest. My pastor came over to me, smiled and said “Your gifts will make room for you future”. I realized that day that God had blessed me with more talents and gifts that I hadn’t even tapped into yet. lol! I stopped believing that I was just a country girl who could sing. I realized that I had so much more to give.
Was there ever a time you almost gave up?
Whew!!! Listen, this year has been rough for so many small businesses including myself. Questioning “My Why” has been a never ending struggle. We did not see the numbers for participation in markets and pop up events this Summer. As an entrepreneur, you are always pivoting and making necessary changes to expand your market and audience. I found myself networking more and requesting help from fellow entrepreneurs. I do believe it comes with the territory of being an entrepreneur, that work is never done. Lol! Take a breath, rest for few minutes and go back to work. It’s definitely better now, but I was certainly questioning if I wanted to continue..
Sure, so let’s go deeper into your values and how you think. Is the public version of you the real you?
All day, everyday! lol!
I’m a musical theater brat and I’m always ready to brighten up any room that I step foot in. It’s not about seeking attention, it’s more so of knowing who you are as person and what you bring to the table. You might not remember my name, but you’ll remember how I made you feel which is loved and appreciated. I’m “Crazy, Fun, Loving Kim” on and off the socials.
Okay, we’ve made it essentially to the end. One last question before you go. What is the story you hope people tell about you when you’re gone?
I want to be known for a few things. I want people to say:
“Kim was a mother, a wife, a performer, a baker, an event planner and a wonderful person willing to help others whenever she could.
Kim made a difference in our community by being a voice for others to thrive and grow in their gifts.
Those who know me, know that’ while I’m motivating and encouraging myself, I’m also cheering for everyone around me.
