Hi Ericka, thank you for taking the time to reflect back on your journey with us. I think our readers are in for a real treat. There is so much we can all learn from each other and so thank you again for opening up with us. Let’s get into it: What do the first 90 minutes of your day look like?
My mornings are my sanctuary right now. My days can be pretty crazy especially when we have major events so I prioritize early, slow, & quiet mornings. Sunrise walks with my dog, espresso on ice, mindfulness, and a good pilates or spin class before diving into work.
Can you briefly introduce yourself and share what makes you or your brand unique?
My name is Ericka Lopez, I am the owner & CEO of HoneyBox Bakersfield & HoneyBox Las Vegas. I started creating edible sunshine also known as charcuterie; during the pandemic when everyone was in need of some brightness. I used to joke about HoneyBox Las Vegas but October will make 2 years of watching some of my wildest dreams come true in LV! We specialize in custom charcuterie boards, boxes, and grazing tables. Recently we won the Fox 5 viewers choice awards in Vegas under Best Catering Category. It’s wildly humbling and cool to see. We work with a lot of amazing local small businesses, professional sports teams, and continue to build a faithful and diverse clientele I’m really proud of!
Thanks for sharing that. Would love to go back in time and hear about how your past might have impacted who you are today. What part of you has served its purpose and must now be released?
The need for perfection! As a woman in general but especially as a woman in the business world. Authenticity has gotten me further than pretend perfection ever could.
What have been the defining wounds of your life—and how have you healed them?
Im newly 29 but the joke is i’m pushing 30! In my life so far I’ve experienced a lot of loss, trauma and heartbreak. I’m constantly praised for my resilience and I know it’s a gift but sometimes that strength is exhausting. I’d say I’m currently working through a lot from my past and some new health struggles. Instead of letting them define me I’m learning to make peace with myself. Slowing down. Listening to my body. Setting boundaries. Showing up. Missing out. I have wasted so much time worried about what others think or want from me. My main goal now is to continue evolving into a woman little Ericka would be proud of. Instead of quitting I’m learning to rest and deal with things when they come up then get back to work. You truly can’t pour from an empty cup!
Next, maybe we can discuss some of your foundational philosophies and views? What’s a belief or project you’re committed to, no matter how long it takes?
I love doing charcuterie don’t get me wrong; but the vision for HoneyBox has always been so much bigger than that. I started this business to create community. To craft intentional opportunities for real connection. I hope that no matter what role I find myself in life; my heart for others and inclusivity will continue to shine. I feel it’s my personal mission to show up & advocate for every young girl who has never felt good enough; never believed in herself; or had dreams bigger than the circle around her could see.

I hope my legacy is love. I hope I’m remembered for my kindness, the fact I always have an open home, a charcuterie board, a bottle of wine and a listening ear. I hope they tell stories of my advocacy for those who couldn’t advocate for themselves. And most importantly I hope I am remembered for my love of dancing even if it’s completely alone in the middle of a crowd like no one is watching. I don’t care to be remembered for my accomplishments or my accolades. I hope I’m always remembered for my heart.
