A typical day for me is a nice mix of creativity and purpose.
I start my mornings immersed in my blog, crafting content that inspires and educates my readers about sugar-free living. After a satiating breakfast—often one of my own sugar-free recipes—I dive into baking, experimenting with new recipes or perfecting old favorites.
In the afternoons, I switch gears to my passion for AI art and music. I love using technology to create unique pieces that resonate with my audience. Whether it’s designing vibrant visuals or composing soothing melodies, these pursuits bring me immense joy. I also take time to engage with my community, whether it’s responding to blog comments, connecting with fellow bakers, or planning upcoming local events.
Each day is a new adventure, and I value the opportunity to share my journey with others.
Can you briefly introduce yourself and share what makes you or your brand unique?
I’m Stacey Harris, known as the Diabetic Pastry Chef. Living with diabetes myself, I’ve dedicated my life to helping others who share this journey.
My mission is to prove that you can enjoy delicious breads, pastries, and desserts without the guilt of sugar. What makes my work truly special is the blend of personal experience and culinary creativity—I teach diabetics and anyone seeking to reduce sugar how to whip up treats that are not only healthy but also incredibly tasty.
Through my blog, books, and local events, I share a wealth of sugar-free recipes and baking tips. I also sell some of my delectable creations both locally and nationally, ensuring that delicious options are accessible to all.
Beyond baking, I’m passionate about merging technology with art—I create AI art and music, sharing these creative expressions at local events and online. It’s a unique blend of tradition and innovation, and I’m excited to bring beauty and joy to those navigating the challenges of diabetes.
Amazing, so let’s take a moment to go back in time. What was your earliest memory of feeling powerful?
My earliest memory of feeling powerful was in home economics class, where I discovered my love for cooking and baking beyond what my mother taught me. It was there that I first crafted Easter cupcakes—a recipe I cherished and adapted over the years to be sugar-free. This experience was empowering, merging creativity with skill and allowing me to contribute something unique.
Transforming a simple recipe into a beloved family tradition was exhilarating. It showed me my ability to innovate and adapt, reinforcing my confidence in my culinary skills. This empowerment was not just about the cupcakes; it was about realizing my potential to create something meaningful.
The encouragement from my home ec teacher fueled my passion further. Her belief in my abilities gave me the confidence to take risks and experiment with flavors and techniques. This foundational experience continues to guide me in my career, shaping my approach to challenges and opportunities.
Was there ever a time you almost gave up?
While I’ve faced my fair share of challenges, the thought of giving up has never truly crossed my mind. Over the years, I’ve navigated numerous obstacles that tested my resolve. I was part of a bakery incubator that suddenly closed its doors, and then the pandemic arrived, shaking the world as we knew it. To add to that, my daughter Tara, who has been my steadfast helper, required surgery on her dominant arm, leading to a lengthy recovery period.
Each of these events was undoubtedly devastating, but instead of succumbing to despair, I viewed them as hurdles to overcome. I took time to reassess and adapt, but quitting was never an option for me.
My passion for baking and teaching is deeply rooted in my experiences, and I’ve always found a way to keep moving forward, no matter the challenges.
I think our readers would appreciate hearing more about your values and what you think matters in life and career, etc. So our next question is along those lines. What would your closest friends say really matters to you?
My closest friends would say that authenticity and integrity are at the heart of what matters to me. I strive to live a life aligned with my values, ensuring my actions reflect my beliefs. This commitment to authenticity fosters trust and respect in my relationships.
Integrity is a cornerstone of both my personal and professional life. It’s about doing what’s right, even when it’s difficult, and holding myself accountable to high standards. My friends know I prioritize ethical behavior and expect the same from those around me. This consistency cultivates an environment of mutual respect.
Additionally, they’d say empathy and compassion are central to my character. I believe in the importance of understanding and supporting others, recognizing that everyone faces unique challenges. This empathetic approach enriches my relationships and informs my work, especially in creating products that meet specific needs.
Ultimately, what matters to me is making a positive impact, whether through personal interactions or professional endeavors. My friends see this in my dedication to my craft and my commitment to helping others, reflecting a life driven by purpose and a desire to contribute meaningfully to the world.

If I knew I had just 10 years left, I would immediately stop dedicating time to activities and commitments that don’t align with my core values and goals. This realization would prompt me to reevaluate my priorities, ensuring my remaining time is spent on pursuits that bring fulfillment and joy. It’s about focusing on what truly matters and letting go of distractions.
I would also stop worrying about trivial matters or seeking validation from others. Life is too short to be consumed by the opinions of others or insignificant concerns. Instead, I’d embrace a mindset of living authentically, guided by my own values and aspirations rather than external pressures.
Furthermore, I’d stop delaying experiences or dreams for the future. Procrastination can rob us of precious time, and knowing life is finite would inspire me to act with urgency. Whether it’s traveling, spending time with loved ones, or pursuing passions, I’d prioritize these meaningful experiences.
Ultimately, this awareness would lead to a life focused on connection, contribution, and personal growth.
By letting go of what doesn’t serve my true purpose, I’d create space for what does, ensuring my legacy is one of positivity and impact. This shift in perspective would allow me to live a life rich in meaning and joy, resonating with the values I hold dear. Plus, I’d prioritize embracing AI technology in my creative projects, leaving a unique and innovative mark on the world.
