Marcus Drones on Life, Lessons & Legacy

We’re looking forward to introducing you to Marcus Drones. Check out our conversation below.

Hi Marcus , thank you so much for taking time out of your busy day to share your story, experiences and insights with our readers. Let’s jump right in with an interesting one: What is something outside of work that is bringing you joy lately?
Seeing my kids grow and develop into the person they will become. My daughter has taken up violin and my son is getting into sports. It’s exciting to see their journey and help them create their own path in the world.

Can you briefly introduce yourself and share what makes you or your brand unique?
Sure! My name is Marcus Drones and I’m the Chef and Owner of Aubreys Heaven, LLC. I specialize in catering birthday parties, weddings, and other events, big or small. My brand is all about bringing sweet and savory dishes to the table that is also satisfying for our clients! Our clients always let us know that the flavor we bring makes us unique. My brand is simple, “Our 1st ingredient is love!”

Amazing, so let’s take a moment to go back in time. Who saw you clearly before you could see yourself?
A few of my chef instructors from Escoffier Culinary School, 3 in particular. Chef Miguel, Chef Jackie and Chef Lyndsay. Chef Miguel was my 1st instructor. He gave me an opportunity to gain some hands-on experience by allowing me to help cook for an event. He also gives me some great advice when it comes to my events! Chef Jackie taught me to have patience when it comes to baking! Chef Lyndsay was young and watching her allowed me to realize that I can do the tough jobs even though I was young at the time of culinary school. Under their guidance and leadership, I was awarded the role of Ambassador of Auguste Escoffier School of Culinary Arts.

Was there ever a time you almost gave up?
Yes. When I got accepted into culinary school, I was homeless when I moved to Austin, Tx. Only because when class started, my apartment was not ready yet. My Pontiac Grand Am caught on fire days before classes started. I was moving 2 states away, new car which means new car note that I did not plan on having that expense, new apartment that was not ready yet. Then I wasn’t allowed to see my child. I was behind in child support and she was moving to Georgia. I had to pay out-of pocket for school. So yes, I almost gave up! I struggled when I lived in Austin, Tx. I look back on that time when I went to culinary school and often think that it was a blessing and a curse! Although I gain the necessary skills to run my business and become a chef, I was depressed, broke, lonely and angry! I thank God for his grace and mercy!

So a lot of these questions go deep, but if you are open to it, we’ve got a few more questions that we’d love to get your take on. What truths are so foundational in your life that you rarely articulate them?
Intergrity!! Doing the right thing even when no one is around is big for me. In the restaurant industry, so many people cut corners or manipulate others and I’m against it! I want to be known for doing the right thing all the time and not when its convenient. We live in a time where people pay for convenience, and I can understand it but my company is not about that. I want to do what’s right!

Okay, so let’s keep going with one more question that means a lot to us: Could you give everything your best, even if no one ever praised you for it?
Absolutely!!! Everything I do, I give it 100%. When my clients request me to do certain events, I plan and make sure that it can be done to satisfy their needs! It’s rarely about me! I will do my very best even when no one acknowledge it.
