Meet Andreas Schmidt

We were lucky to catch up with Andreas Schmidt recently and have shared our conversation below.

Andreas, looking forward to learning from your journey. You’ve got an amazing story and before we dive into that, let’s start with an important building block. Where do you get your work ethic from?

My parents always encouraged me to be the best I could be from a very young age, which meant getting the best grades and as many achievements as possible. I would work hard in school, work to get the lead roles in every school play, train the hardest to be the best runner in Track and ultimately, make the best apple pie known to man.

Thanks, so before we move on maybe you can share a bit more about yourself?

I bake and decorate custom cakes and pastries for private events. It’s truly my favorite thing to work with a client to create the best flavor combo and design for the perfect center piece. No matter the occasion, people deserve to feel just as prioritized and valued as event itself. I believe cake is the best outlet.

If you had to pick three qualities that are most important to develop, which three would you say matter most?

The main important quality in baking is attention to detail. New flavor palettes/combo require such specific information. Learning what tastes compliment each other and the best avenue to incorporate it requires so much specificity. Furthermore, courage to experiment will lead to so much growth. Decoration, leavening agents, flavor combos all require risk that can only be accomplished by consistency. Finally, artistic creativity. People always eat with their eyes first and aesthetic design is comparable to sculpting/painting and even interior design. Know what best work in the space you have available.

To close, maybe we can chat about your parents and what they did that was particularly impactful for you?

It’s seemingly small but growing up my parents created this system to keep us busy in the summer where my two siblings and I would each pick a night and take turns making dinner. We would choose recipes from some of the recipe books we had in the house, my parents would get the groceries and we would cook appetizers, entrees, and desserts. It was a great idea to keep us occupied but it really made me fall in love with food.
