Hi Ashley, appreciate you sitting with us today to share your wisdom with our readers. So, let’s start with resilience – where do you get your resilience from?
Resilience has been an essential part of my journey, especially as someone who has faced significant health challenges. I was diagnosed with Multiple Sclerosis at 21, and more recently, with Mast Cell Activation Syndrome (MCAS) and Postural Orthostatic Tachycardia Syndrome (POTS). From a young age, my body has consistently presented me with battles, but I quickly realized that I had no choice but to fight for the quality of life I wanted. While many people in my position might feel overwhelmed, I have always been driven to keep pushing forward, even on the toughest days when my body feels like it’s working against me.
This mindset has greatly influenced how I run my business. As an entrepreneur, challenges are inevitable, but my experience has taught me to approach them with creativity and persistence. Sometimes, my physical limitations require me to think outside the box to complete tasks or solve problems, but I always find a way to make it happen. To me, resilience is about continually moving forward, no matter the obstacle, while prioritizing health and adapting to the unique circumstances you face.
Let’s take a small detour – maybe you can share a bit about yourself before we dive back into some of the other questions we had for you?
I founded Bella Foodie to share the hard-earned knowledge I’ve gained about how food can support various symptoms and functions in the body. My goal is to help people live their healthiest and most fulfilling lives, whatever that looks like for them. Many of my clients, like me, have faced health challenges, and they often feel overwhelmed by the lifestyle changes required. Knowing what’s wrong can be a relief, but the real challenge comes from figuring out how to manage those changes and where to start.
At Bella Foodie, I work with clients to make meaningful changes to their diets and lifestyles, focusing on gradual, personalized steps that make the transition easier and sustainable. My philosophy is that everyone’s version of “healthy” is different, and I help clients discover what that means for them. Whether through one-on-one cooking classes, workshops, or corporate wellness programs, I make it my mission to show people that healthy eating can be fun, flavorful, and achievable.
Beyond individual clients, I also have the privilege of working with nonprofits to help educate kids about healthy choices early on, which is something I’m deeply passionate about. I believe that if we start young, we can instill lifelong habits that will carry them through adulthood.
On a personal note, a dream of mine came true a few years ago when I launched my own organic, fair trade, kosher coffee line called Foodie Fuel. For anyone who knows me, coffee is a big part of my life, and I couldn’t be more excited to share it with others.
Ultimately, Bella Foodie is about empowering people to take control of their health in a way that works for them. If you’re looking to make changes, whether big or small, I’m here to guide you on that journey to stay healthy from the inside out.
Looking back, what do you think were the three qualities, skills, or areas of knowledge that were most impactful in your journey? What advice do you have for folks who are early in their journey in terms of how they can best develop or improve on these?
First, surrounding myself with the right people has been invaluable. Having a supportive circle of friends and mentors—especially those who are also business owners—has provided both personal encouragement and professional advice. Trust is critical; knowing I have people I can rely on for honest feedback has allowed me to navigate challenges more effectively.
Second, the willingness to take risks and be okay with failure is essential. Not every idea is going to resonate, and that’s perfectly fine. Some initiatives might not work out the way we envision, but being open to experimentation is key to growth. Every ‘failure’ is an opportunity to learn and adjust for the future.
Lastly, staying up-to-date with trends and continually learning new skills has kept my business vital and relevant. Whether it’s honing my techniques in the kitchen or knowing when to seek the expertise of others, being open to growth in every aspect has made a significant difference.
For those just starting out, my advice is to actively build a network of trusted people who can offer guidance, be willing to take calculated risks and learn from them, and never stop improving. Growth in business is a continual process, and success comes from both personal resilience and a commitment to evolving with your field.
How can folks who want to work with you connect?
Yes, I am actively seeking partnerships and collaborations with like-minded companies and individuals who share my passion for holistic health and supporting those with autoimmune conditions. Since being diagnosed with MCAS and managing my MS, I’ve become even more focused on working smarter to protect my health while continuing to make a meaningful impact.
I’m particularly interested in collaborating with brands that offer products and services geared toward individuals with autoimmune conditions, those focused on organic and sustainable foods, and holistic wellness practices. My goal is to develop recipes and content that highlight how these products can enhance both health and well-being. I’d love to showcase the incredible work these companies are doing, and I’m committed to sharing their value with an audience that truly needs them.
One of my biggest dreams is to write a cookbook that not only features my recipes but also shares my personal journey—proving that healthy food can be both delicious and supportive of our bodies. When I find a brand I believe in, I’m all in. I want to elevate that brand, tell its story, and help people live healthier lives from the inside out.
