We caught up with the brilliant and insightful Bhagyesh Patel a few weeks ago and have shared our conversation below.
Bhagyesh , so good to have you with us today. We’ve always been impressed with folks who have a very clear sense of purpose and so maybe we can jump right in and talk about how you found your purpose?
Growing up in Ahmedabad, India, we enjoyed a wide variety of delicious and addictive egg dishes every week. After moving to America, we missed the flavors, atmosphere, and especially the late-night street food. While we couldn’t bring Ahmedabad to America, we could recreate its flavors, vibe, and atmosphere. That’s how Eggholic was born.
We’re not talking about your ordinary omelette or scrambled eggs. While anyone can cook those, perfecting the right seasonings takes skill, which we’ve mastered. This inspired us to bring Indian-style eggs to America. Our love and expertise have introduced a unique twist to Indian street food in America.
We offer a range of Indian street food that tastes just like the lahris (street carts) in India. Whether you’re looking for eggs with delicious gravies, a variety of sandwiches, flavorful rice, or chaat, we’ve got it! Our meals are freshly prepared on the spot, with unique spices that will take you straight to food heaven.

Our passion lies in both enjoying and creating exceptional food. Seeing the joy on our customers’ faces as they dine brings us immense satisfaction. We are deeply committed to giving back to the community and prioritizing the use of recyclable materials. This dedication not only motivates us but also ensures a delightful experience for all our employees.
If you had to pick three qualities that are most important to develop, which three would you say matter most?
By prioritizing excellent customer service, building an amazing team, and mastering one skill to its fullest, we have built a successful and resilient business. For those starting their journey, these principles can provide a strong foundation. Focus on understanding and delighting your customers, cultivating a talented and motivated team, and becoming an expert in your chosen niche. This approach will not only help you succeed but also create lasting value for your customers and community.
Any advice for folks feeling overwhelmed?
Our strategy of pausing to hold team meetings when we feel overwhelmed has proven to be incredibly effective. It allows us to communicate openly, leverage our team’s collective strengths, and provide emotional support. This approach not only helps us find practical solutions to our problems but also strengthens our team’s cohesion and resilience. By fostering a culture of collaboration and mutual support, we are able to navigate challenges more effectively and maintain a healthy, productive work environment.
