Frankie, so great to have you with us and thanks for taking the time to share your thoughts with the community. So, let’s jump into something that stops so many people from going after their dreams – haters, nay-sayers, etc. We’d love to hear about how you dealt with that and persisted on your path.

I keep pushing forward. Without the passion and love I have for ramen, I would have given up long ago. There’s always an opinion or obstacle trying to knock me down, but despite my inconsistencies and imperfections, I strive to be better every day.

I remind myself of that little kid in the kitchen, learning from my parents that food is about family. This ramen journey has always been about the people who support us—our guests, my coworkers, my employees, and everyone who goes out of their way to try our food.

The drive to overcome negativity comes from true love—love for the craft, love for the people around me, and love for the community we’re building. No matter the circumstances, the people who matter most give me the strength to keep going.

Great, so let’s take a few minutes and cover your story. What should folks know about you and what you do?

Ramen. It’s the ultimate dish for noodle lovers. I’ve spent countless hours mastering every element—noodles, broth, sauces, toppings, and oils—because ramen is what makes my world go round. The work it takes to create it, the passion it demands, and the endless pursuit of improvement drive me every single day.

The truth is, there’s no such thing as a “perfect” bowl of ramen. But what makes it beautiful is the heart and soul poured into it. It’s the people behind each bowl, the dedication, and the love that make ramen truly special.

I was that kid who refused to leave the kitchen, watching the women in my family cook and serve with love. No matter how many times they tried to kick me out, I wasn’t going anywhere. Now, running a ramen shop gives me the purpose to carry on that tradition—serving love in a bowl.

This is more than just food; it’s my calling. My goal is to nourish not just the body, but the mind and soul of everyone who sits at my table. Being a chef is the greatest joy of my life—to put in the long hours, connect with people through ramen, and serve something straight from my heart.

We’re working on finding the perfect space to open a ramen shop soon. But until then, we’re bringing the experience to you—one pop-up at a time, all over Charleston.

If you had to pick three qualities that are most important to develop, which three would you say matter most?

Three skills have shaped my journey as a chef: persistence, consistency, and staying true to myself—no matter what anyone else thinks. Be yourself at all times, and push your craft to the absolute limit. Don’t let opinions shake your confidence. Passion and authenticity are what truly matter.

In my early days, it was hard to embrace who I was. I admired so many chefs and wanted to be like them. But the truth is, you shouldn’t aim to be like them—you should aim to stand beside them. Don’t be afraid. Believe in yourself.

Put your faith into everything you do. Work harder than the competition. Work harder than the doubters. Outwork every opinion, every negative thought, every lazy moment. Push beyond your limits. That’s how you grow, that’s how you succeed, and that’s how you make your mark.

The support of my staff and family has been invaluable. Building a restaurant and a brand is a relentless challenge, with countless moving parts. But having the right people around you makes all the difference—it pushes you to work harder and stay focused on your goals. Growth comes from daily repetition, honing your skills, and paying attention to the smallest details. If you stay committed, keep learning, and immerse yourself in your craft—whether through hands-on experience or studying cookbooks—you’ll continue to improve every day.
