James , we’re thrilled to have you sharing your thoughts and lessons with our community. So, for folks who are at a stage in their life or career where they are trying to be more resilient, can you share where you get your resilience from?
I believe to be resilient and to have great testimony you must be tested, having the notion deep within my soul, that I want to discover the authentic pure essence of my heritage drives my resiliency. As a chef, it is important to be in love with the work, as it is arduous at times , and it is through this practice of love for my art I have found myself .
Thanks for sharing that. So, before we get any further into our conversation, can you tell our readers a bit about yourself and what you’re working on?
Food to me is a universal art that allows so many bridges to be broken down and Ken beautifully connect people in the simplest of ways. I feel it is my destiny to Xpress, the unique myriad of Latin flavors to the world.. my mission is to bring light to the essences of balance that Latin culture, upholds. I like to think that I do not make food, but I create and make experiences for my customer base and eaters. We strive every day to emulate love, and to capture the soul of an array of Latin flavors. My beautiful wife and children have opened my mind and heart to allow me to Xpress these deep feelings to the world.. we seek to thread balance in our menus and cuisine.
We are currently getting ready to roll out our long awaited philosophical sauce line. With many requests and demand, we are really excited about this venture. It will allow us to introduce flavors that we predicate or Brand on . We are going to start with are base sauces.
Mojo madness (fresh and bright )
Hot flamingo (vivid and spicy)
Cholo sauce (deep and Smokey )
If you had to pick three qualities that are most important to develop, which three would you say matter most?
What an amazing question, first, I would like to say the fundamental skill that helped me most get to where I am at today, is having mental discipline. It is a skill to be cognizant and disciplined in whatever it is that you do, and will starting my business I really focused on being disciplined in numerous areas.
Secondly, is learning the beautiful foundations of cooking, I am forever indebted to my mentor chef Nick Seaburgh , as he generously guided me through the kitchen woes .
And lastly, becoming a better communicator. Communication is so important when starting a business, being a good communicator has showed me that this alone creates fluidity, with your brand and customer base.
My advice to anyone embarking on a new endeavor, is patience is absolutely key. Be patient with yourself in your ideas and allow them to manifest when the right time aligns. Believe in your work and let tomorrow worry about itself., patients allows you’re sad product or company to manifest in the correct light .
Who has been most helpful in helping you overcome challenges or build and develop the essential skills, qualities or knowledge you needed to be successful?
The most important person through this entire journey has indomitably been my stunning, strong wife . She endowed me with the confidence and courage to grow. What is now Fresco and Fryed . The patient she displayed support and utter unconditional love is something that I am very blessed with. Her work ethic outshines her beauty and her strength is unmatched., spunky and witty. In every moment I owe so much of my success to her.
