Meet Jimmy Chill

We caught up with the brilliant and insightful Jimmy Chill a few weeks ago and have shared our conversation below.

Jimmy, so great to have you with us and we want to jump right into a really important question. In recent years, it’s become so clear that we’re living through a time where so many folks are lacking self-confidence and self-esteem. So, we’d love to hear about your journey and how you developed your self-confidence and self-esteem.

Confidence didn’t just appear for me, it was built over time.
It came from long nights in the kitchen, leading teams through pressure, and realizing that even in the moments I doubted myself, I could still deliver. Growing up in the Galilee gave me deep roots, but it took years of moving countries, creating new concepts, and stepping into unfamiliar roles to learn how to trust myself. My self-esteem really grew when I stopped trying to imitate others and started leaning into my own story: bringing my background, memories, and influences into the food I cook. The more people connected with that authenticity, the more I understood that resilience and honesty are what truly give me confidence.

Thanks, so before we move on maybe you can share a bit more about yourself?

Right now, I’m leading three main brands that highlight different sides of my work. Chill’s Table is my consulting and private chef company, where I design concepts, develop menus, and curate intimate events tailored to each client. It’s where I get to merge creativity with strategy: helping restaurants and hospitality businesses thrive while also creating unforgettable dining experiences in people’s homes and at special gatherings.

I also run No Manners, a seasonal pop-up that’s deeply personal and rooted in my Galilean background, reimagining Arab cuisine in a way that feels both rebellious and alive. Alongside that, I serve as the Culinary and Creative Director of Olea & Bloom at Xcel Padel in Westlake and West Palm Beach, where we’re building a wellness-focused food and beverage program that connects healthy dining with the padel community. Between these three projects, I move fluidly between consulting, private events, and creative collaborations; and that balance keeps me inspired, challenged, and closely connected to both my roots and my community.

If you had to pick three qualities that are most important to develop, which three would you say matter most?

Looking back, three things shaped my journey most: resilience, creativity, and adaptability. Resilience carried me through long hours, self-doubt, and the ups and downs of running projects in different countries. Creativity gave me my voice: it let me take my Galilean roots, mix them with global influences, and create experiences that felt authentic and different. Adaptability has been key too, whether adjusting to a new city, reimagining a concept last minute, or balancing consulting with pop-ups and private events.

For anyone starting out, my advice is to embrace the hard moments, because that’s where resilience is built. Allow yourself to be creative and experiment, even when it feels risky. And stay flexible: opportunities rarely look the way you expect, but if you’re willing to adapt, they can take you further than you imagined. The more you lean into your own voice, the more rewarding the journey becomes.

As we end our chat, is there a book you can leave people with that’s been meaningful to you and your development?

One book that had a major impact on me is Atomic Habits by James Clear, especially the idea that small, consistent actions compound into meaningful change. It taught me that growth isn’t about big leaps but about showing up, building systems, and making small improvements that stick. That perspective helped me center myself and find more balance between work and personal life, reminding me that if I’m not taking care of myself, I can’t give my best to others. Simple daily rituals, routines, and intentional pauses have made a huge difference in how I approach both my career and my life.
