Alright – so today we’ve got the honor of introducing you to Kelsi Eastman. We think you’ll enjoy our conversation, we’ve shared it below.
Kelsi , we’re so excited for our community to get to know you and learn from your journey and the wisdom you’ve acquired over time. Let’s kick things off with a discussion on self-confidence and self-esteem. How did you develop yours?
Honestly it is something that I still struggle with, but I think that my kids have really helped with that. When I started making cakesicles I was really worried about how they looked or tasted and if anyone would even WANT them. But people have! Which is amazing but it is hard not to question if it is because they want to support me or genuinely like the cakesicles!
My husband is a huge supporter and will help me as I develop flavors but has I have grown one of the greatest feelings is when I catch him off guard during a taste test. Such a huge boost to see his real and raw reaction!
Kids on the other hand bring such a boost. There are days that I am prepping orders and my 3 year old will walk over and say “WOW! Mommy. Doze yook amazing!!” My daughter loves all things “pretty” so if there are ones that she likes- immediately she wants them for her next birthday. Kids are so brutally honest and tell it like it is. So, I know from their comments that there is something truly special here.

Appreciate the insights and wisdom. Before we dig deeper and ask you about the skills that matter and more, maybe you can tell our readers about yourself?
I make cakesicles! So, like a cake pop but better (because who doesn’t want MORE cake?). I saw some cakesicle videos on TikTok in early 2022 and thought they looked so cool and quickly became obsessed. My husband finally told me that I either needed to start selling them or stop making them because we had so many in our house haha. Oh, and I am gluten intolerant so I couldn’t even eat them! So, I took the plunge and started selling them. I have loved to see the difference from where I first started to now.
I also love getting to experiment with new flavors! I just launched an updated menu to include some new flavors and there is something new I am working on BUT it is still really early so not sure if it will work out yet.

Looking back, what do you think were the three qualities, skills, or areas of knowledge that were most impactful in your journey? What advice do you have for folks who are early in their journey in terms of how they can best develop or improve on these?
I would have to bring some of it back to my high school arts program. I have always seen things in colors and that has helped when it comes to memorizing as well. I have loved to get back into that creative zone!
Also, so many bakers would agree that baking is a science. I am a full time medical laboratory scientist, so it has been cool getting to mix these two sides! I also come from a long line of bakers so I love to think about if my Great Grandma Hightower would’ve liked my strawberry cakesicles.
Advice wise- keep at it! Ask questions, experiment, and explore all your different resources. I am an open book and happy to answer questions about things I have learned! It is a journey and we all move along at different paces. Don’t let where someone else is make you feel bad about where you are.

Alright, so before we go we want to ask you to take a moment to reflect and share what you think you would do if you somehow knew you only had a decade of life left?
I would spend that time with my family and traveling! Seeing different parts of the world while soaking up every single moment with my family that I can.
