Alright – so today we’ve got the honor of introducing you to Lance Cowart. We think you’ll enjoy our conversation, we’ve shared it below.

Hi Lance, we’re so appreciative of you taking the time to share your nuggets of wisdom with our community. One of the topics we think is most important for folks looking to level up their lives is building up their self-confidence and self-esteem. Can you share how you developed your confidence?

The biggest thing for me is taking time to myself. I make time to understand my needs and wants. I allow myself to make sensible choices , that will guide me spiritually and emotionally. I think of building confidence and self-esteem, focus on recognizing your strengths, setting achievable goals, practicing positive self-talk, taking care of yourself physically and mentally, stepping outside your comfort zone, surrounding yourself with supportive people, and celebrating your accomplishments, rather than comparing yourself to others.

Appreciate the insights and wisdom. Before we dig deeper and ask you about the skills that matter and more, maybe you can tell our readers about yourself?

Lance is a professional chef with over 25 years of progressive experience.
Lance started his career Information Technology. I went to Culinary school and trained in French and Italian cooking. I then switched my focus and been working for 10 years as a freelance private chef. I hold a culinary degree from Le Cordon Bleu in culinary and restaurant management. I have diverse skills including a wide variety of ethnic cuisines (including Creole, French fusion, Southern Italian, Authentic Mexican), large party cooking, and dietary cooking, baking, pastry, and charcuterie.

I have executed many large dinner and cocktail parties, from one hundred to three hundred fifty guests, including fundraising and birthday events. I spent my early days working for Carmelized Productions. Celebrity Chef’s Jon Shook and Vinny Dotolo’s full service catering company. Carmelized Productions can accommodate events of all sizes from an intimate dinner party to large scale events. I work for another large catering service in LA called Tres LA. with over 15 years of experience in the events and hospitality industry. From exceptional catering and beverage service to stylish venues.
I launch the Floating Bistro catering company in 2019. Family owned and operated. We provide full service catering for small and large events. Our mission is to give the customer a wonderful experience.

Looking back, what do you think were the three qualities, skills, or areas of knowledge that were most impactful in your journey? What advice do you have for folks who are early in their journey in terms of how they can best develop or improve on these?

I believe that the most important qualities for success to be a combination of passion, perseverance, adaptability, strong work ethic, and a willingness to learn and grow; essentially, a deep commitment to your goals, the ability to overcome challenges, and a drive to continuously improve yourself and your skills. 

We believe in family. Our business has always been about living out dreams and goals. Celebrating with what we do best. The business of providing great food, drink, and accommodation for our customers.

Who has been most helpful in helping you overcome challenges or build and develop the essential skills, qualities or knowledge you needed to be successful?

My parents taught me the meaning of pride. My Dad was a self made man and business owner. My Mom provided my father with unfettered support. They worked as a team. They created businesses and served the community. Building a nonprofit organization and feeding the homeless for over 20 years was their mission. They taught their five children the meaning of charity and good will. This would stay with me going forward. My parents believed in education and personal development. Having an education is just part of the journey. The rest is up to you.
