We’re excited to introduce you to the always interesting and insightful Lindy Xenidis. We hope you’ll enjoy our conversation with Lindy below.
Lindy, we’re so excited for our community to get to know you and learn from your journey and the wisdom you’ve acquired over time. Let’s kick things off with a discussion on self-confidence and self-esteem. How did you develop yours?
I truly feel confidence and self-esteem never come easy. It’s something we start preparing for at an extremely young age and for some it can be more challenging than others. Then of course as life moves at it’s normal unforgiving pace we sometimes end up facing situations that can harshly interfere with the progress we have already made, putting us back at square one. In Elementry school I developed a passion for track and excelled very quickly. This was something I felt incredibly confident in as well as it truly boosted my self-esteem. I would have to say this was the foundation to building my confidence & self-esteem. As life moved forward and challenges presented themselves in one situation after the other I have to admit I started feeling the loss of both confidence and self-esteem I had worked so hard to gain.
Let’s take a small detour – maybe you can share a bit about yourself before we dive back into some of the other questions we had for you?
About 30 years ago I found I had a true passion for cooking. I am a self taught chef and now own my own catering company. It didn’t happen overnight by any means. It took a tremendous amount of patience, time & confidence to get to where I am today. Catering to me has a very special meaning. Catering for most generally comes with a vision and it’s my job to create this vision for my clients. Top quality food is priority at Lindy Lu’s Kitchen however this is only half of the service. The other half is presentation. Sitting down with the client and making that necessary connection is extremely vital for success. Taking on their vision allows me to successfully carry it out and take it to the next level which in the end makes for a very pleased client and this for me is an all time goal.
If you had to pick three qualities that are most important to develop, which three would you say matter most?
Catering requires a lot of patience, time and creativity. Patience and understanding is very important. An individual seeks out a good catering company in order to help alleviate some of the stresses that go along with planning an event. Arriving to an event calm, patient and ready to resolve any last minute issues is very important. So I always arrive mentally prepared for anything and this allows me to be open minded and always ready. Then there’s the creative side of catering. This is the fun part. I’d say a good majority of clients come to me asking for suggestions on presentation and I’d say 90% of the time I pull together specific menu options for them to choose from. I love sitting down and pulling together these options especially when the client is pleased with the options presented to them. Catering definitely has it’s ups and downs but in the end it’s what I love and there’s no better feeling than a happy client.
Who has been most helpful in helping you overcome challenges or build and develop the essential skills, qualities or knowledge you needed to be successful?
My line of work at times can really present with many different challenges. I would have to say that my family has been my biggest source of support. Being a self taught chef, it’s my family that has always been there to offer constructive criticism which I’ve always openly welcomed. My family are also my biggest fans offering so much love, support and encouragement!
