Alright – so today we’ve got the honor of introducing you to Pola Galie. We think you’ll enjoy our conversation, we’ve shared it below.

Pola, so good to have you with us today. We’ve got so much planned, so let’s jump right into it. We live in such a diverse world, and in many ways the world is getting better and more understanding but it’s far from perfect. There are so many times where folks find themselves in rooms or situations where they are the only ones that look like them – that might mean being the only woman of color in the room or the only person who grew up in a certain environment etc. Can you talk to us about how you’ve managed to thrive even in situations where you were the only one in the room?

Since I am a more than middle-aged woman of a “shorter” stature, I am often the only one who looks like me in an industrial setting. There are plenty of woman of a variety of ethnic backgrounds and roles in the fermentation industry but most of the tine the women my age are relegated to the office for human resources or sales. The number is not very big for those of us who are on the brewhouse floor or actively serving in the tasting room.

Great, so let’s take a few minutes and cover your story. What should folks know about you and what you do?

Our journey began in 2013 over a family dinner when I asked my son, “How can I help, honey? I can cook.” From there, we embarked on the adventure of opening a brewery, with every family member playing a key role. My son, Sean, and I are the brewers, while his wife, Abbie, handles marketing and design. I take care of everything else, alongside our dedicated staff.

Starting the first brewery in town wasn’t easy—many were uncertain about having an alcohol manufacturer, especially in the heart of the Historic Main Street District. But we persevered, creating something unique. I like to say we’re the “oddball” brewery, more like a medieval-style brewhouse where the brewer or owner is always on-site. Inspired by colonial taverns, we built a welcoming “third place” where people can relax, meet friends, and share a sense of community. We offer free meeting space for local organizations and pride ourselves on being a safe, inclusive environment—where, as I like to joke, everyone is welcome… except mean people. (And I mean it!)

We craft our recipes using only natural ingredients—never adding lactose—and offer gluten-free options, always pushing creativity within New Jersey’s unique brewery restrictions.

As a female septuagenarian running the brewhouse and taproom, I’ve proudly embraced my title as Beer Mom. I keep an eye on things, stepping in when needed—whether it’s slowing down a fast drinker or ensuring everyone feels comfortable. This brewery is more than a business; it’s a family, a passion, and a community hub. And I wouldn’t have it any other way.

If you had to pick three qualities that are most important to develop, which three would you say matter most?

Looking back, the three most important qualities in this business have been patience, stamina, and adaptability—all essential in navigating New Jersey’s evolving regulations and the ever-changing craft beer industry. And above all, a sense of humor has been invaluable! (So maybe that makes four?)

A strong foundation in cooking and understanding how ingredients interact has also played a big role in designing beer recipes that resonate with our customers. Creativity in flavor development and problem-solving is just as crucial as technical brewing skills.

For anyone considering a path in brewing—or any fermentation-based industry—my biggest advice is to truly understand what you’re getting into. Owning a business isn’t just about the craft; it’s about managing finances, regulations, and customer expectations. Do your research, understand your local market, and be prepared to pivot when necessary. The industry is rewarding, but success comes from a mix of passion, business sense, and the willingness to roll with the punches.

Who has been most helpful in helping you overcome challenges or build and develop the essential skills, qualities or knowledge you needed to be successful?

In our family-owned business—perhaps built in reverse generations—my son has been the rock. We’ve been in businesses together for 30 years, and our strong foundation of trust and communication has been key to overcoming challenges. When issues arise, we research, discuss, and make decisions together. While the brewery was initially his idea, working as a family, including my daughter-in-law, has allowed each of us to shine in our own way.

There’s no competition or power struggles—just three equal and distinct individuals, each bringing different strengths to the table. We recognize our unique skill sets and rely on each other to balance out weaknesses. This dynamic, built on mutual respect and collaboration, has been essential in navigating the complexities of the brewing industry while keeping our business both creative and successful.
