We were lucky to catch up with Rafael Hernandez recently and have shared our conversation below.

Rafael, so great to have you with us and we want to jump right into a really important question. In recent years, it’s become so clear that we’re living through a time where so many folks are lacking self-confidence and self-esteem. So, we’d love to hear about your journey and how you developed your self-confidence and self-esteem.

My confidence grows from the experience acquired after working producing artisan bread, pastries, and donuts production.

Thanks, so before we move on maybe you can share a bit more about yourself?

The reason for making the decision to start creating a concept or project in which I could merge all the possible concepts according to my acquired experience, having been able to work with large corporations and having had the opportunity to study and take classes with great masters of the bread and pastry industry (Kendall College, Jeffrey Hammelman, Didier Rosada, etc.) after this long learning journey, with the support of a work team, I decided to begin this path of great responsibility and dedication.
The idea of ​​this new concept is to be able to offer each of our clients a variety of flavors that can distinguish our brand for its flavor, quality, variety and diversity.
There are currently large companies with a great variety of very good concepts, but nowadays it is not only what can be offered or done as a concept, now everything counts and one of the very important things is to never lose that idea of being able to offer a good product if not also maintain the consistency of good quality and continue to innovate more every day because being realistic you never stop learning in this industry that is so beautiful and full of new challenges.

There is so much advice out there about all the different skills and qualities folks need to develop in order to succeed in today’s highly competitive environment and often it can feel overwhelming. So, if we had to break it down to just the three that matter most, which three skills or qualities would you focus on?

The three areas or skills that I acquired to grow in my knowledge were Study, Learning and Practice.

Study- Studying is a very important part because you must learn the most important base of any baking or pastry industry, which is Flour, after that comes a series of different factors which teach us why sometimes we do not obtain the desired results. When you study it, it is easier to understand the different factors which can lead to an undesirable result. At the end of the day, the bread and pastry or donut industry involves many factors, which makes it a science.

Learning- is another of the most important parts because when you study at a school or a bread or pastry course, over time you acquire the necessary knowledge to begin to understand what are the factors that can lead you to a bad situation. result, you can make the decision or understand what the reason for a bad result was.
The learning will teach us the types of flours that exist in the market because there is a huge variety of them, the mixing times which is a very important part because not everything can be mixed the same, also how to use organic and better-quality products.

Practice- Practice for me is the most essential part of everything because it is where we are truly going to realize what our reality is according to our results because everything depends on the facilities or machinery that we are going to use to make our product.
Currently there is a variety of very good equipment which can give us a better or worse result since it all depends on what we are going to use and how we are going to use it.

The advice that I could give to all new entrepreneurs:
If you are studying or working, it is very important to always make notes about what you are doing because sometimes there are small details that can make a big difference.
Don’t be afraid to innovate because each one has their own ideas or concepts, never stop learning, there is always something new to know or learn.
For me, something very important that can lead to success or failure is to form a good, strong and trustworthy work team because all the parts are very important. Without a good work team, it is much more difficult to execute or achieve our results. wanted.

Okay, so before we go, is there anyone you’d like to shoutout for the role they’ve played in helping you develop the essential skills or overcome challenges along the way?

I believe that the most important and essential thing is the support of my Family, Teachers and Friends because without them it would have been more difficult, without their knowledge, help and support I would not have been able to do many of the things that I have done or accomplished. They were without doubt an essential part of my work projects.
